Ingredients
• 1.5kg Icing sugar
• 2tbsp Gelatin
• 2tbsp Liquid glucose (Heaped)
• 2tsp CMC
• 1 tbsp Edible Glycerine
• 12tbsp Water
• Corn Flour
• Shortening (preferably during dry season)
Tools
• Bowl
• Stirrer
• Mixing bowl
• Clean Surface( Tile, Board)
• Cling film
Procedure For Preparing Your Fondant
1. Sieve your icing sugar in a bowl.
2. Add CMC and mix.
3. Create a hole at the middle.
4. In a double boiler ( this is achieved by putting a bowl in a hot water when there is another water in the bowl, this is usually done to avoid gelatin mixture to boil over), sprinkle your gelatin on the surface of the hot water.
5. Stir your fondant continuously until it is totally dissolved.
6. Add the liquid glucose and let the mixture dissolve completely.
7. Remove the mixture from heat, add glycerine and pour the mixture in the created hole.
8. Mix until the icing sugar and CMC mix is properly mixed with the liquid mixture.
9. Transfer your fondant on to your clean working surface and knead your fondant. Excessive force is not needed when kneading your Fondant, a gentle knead is enough.
10. Add 1 tbsp at a time till you get the normal consistency, if your fondant is hard.
Sprinkle some cornflour/shortening on your working surface when fondant sticks to the surface.
Wrap your Fondant with a cling film and store.
