How To Make A Moist And Fluffy Nigerian Vanilla Cake

The simple and concise recipe below can be easily used for making a moist, fluffy and delicious nigeria cake that melts in the mouth, if carefully followed.

THINGS YOU WILL NEED
Ingredients
• 500g Flour ( preferably cake flour)
• 500g Butter
• 1 cup Sugar
•  500g Egg ( without shell)
• Spices (Cinnamon, Nutmeg)
• Flavour (Vanilla extract)
• 2½ tsp Baking Powder 
• Milk (optional)

Note: You may increase the quantity of your ingredients for a bigger cake

Tools
• Baking Pan
• Mixing Bowl/Mixer
• Wooden Spoon
• Spatula
• Oven
• Sieve/Strainer
• Egg whisk
• Kitchen Scale

BEFORE THE MIXING PROCESS
✓ Make sure all tools are clean and dry
✓ Make sure you have all the ingredients ready
✓Mix the dry ingredients together ( flour, baking powder, baking soda,spices)
✓Separate the egg yolk from the egg whites and whisk the egg white to a stiff peak and fold it later on to the cake batter
✓For an extra moist and fluffy cake, add ½ teaspoon cream of tartar/ vinegar/lemon juice to the egg whites while mixing

STEPS FOR MAKING THE CAKE
1. Grease your baking pan and add little flour to coat.
2. Preheat your oven
3. In a mixer (if you are using mixer) /mixing bowl, put the butter and sugar then mix for 5-10minutes until it is white and fluffy. Do note that over mixing your cake batter results in a dense and hard cake, so don't over mix your cake batter.
4. Add the separated egg yolk to the creamed cake batter and mix , then add your seasoned flour then mix it by folding to avoid excessive gluten formation due to over mixing
5. Add the whisked egg white and flavour then mix it by folding
6. Pour your cake batter into the pan and put it inside the oven and bake.
✓ Bake your cake in batches this allows the cake to retain it's moisture, rise well and bake properly
